Recipe Box: One Pot Orecchiette

Cooking in my tiny apartment kitchen has it’s challenges; zero counter space, old school appliances, and worst of all, NO DISHWASHER. Which is why I love and actively search out “one pot” recipes. This way I can spend more time chowing down and less time scrubbing.

One-Pot Orecchiette with Swiss Chard and Tomatoes


12 oz. orecchiette pasta, uncooked

2 pt. cherry tomatoes, halved (I recommend the San Marzano tomatoes from Trader Joe’s!)

1 yellow onion, sliced

2 Tbsp. tomato paste

4 garlic cloves, slices (or you can use jarred garlic)

1 tsp. lemon zest

1 tsp. kosher salt

41/2 cups water

1/2 bunch of Swiss chard, chopped

1 (15 oz) can chickpeas, drained and rinsed

2 oz. crumbled Feta cheese

1/2 tsp. black pepper

COMBINE pasta, tomatoes, onion, tomato paste, garlic, lemon zest and salt in a large Dutch oven

ADD the water and bring to a boil over medium-high. Cook, stirring constantly, until most of the liquid is absorbed and the pasta is almost tender, about 8 minutes

TOSS in the Swiss chard and chickpeas and cook, stirring constantly, until the Swiss chard is wilted and the pasta in tender, about 2 minutes more

SPOON into 4 bowls and top with the Feta and black pepper
