After getting my wisdom teeth out last week, I’ve slowly been able to start eating things other than mashed potatoes and scrambled eggs.
I made this super-simple slow cooker Asian beef recipe over the weekend, and it was delicious! I recommend pairing with a nice, crisp beer. Enjoy!
1 can beef broth
1/2 cup hoisin sauce (I used Trader Joe’s Soyaki instead and it was great!)
1/2 cup reduced sodium soy sauce
2 tbsp. rice vinegar
1 tsp. crushed red pepper
1.5 lb beef chuck roast, cut into 2 pieces
6 medium radishes, sliced thin
6 scallions, chopped
Rice noodles or the rice variety of your choice (I like jasmine)
COMBINE the broth, hoisin sauce, soy sauce, vinegar, and red pepper in a 4-6 quart slow cooker. Add the beef.
COVER and cook on low, about 8 hours.
SKIM off the fat. Remove the beef and shred with 2 forks. Return shredded beef to slow cooker.
SERVE beef over noodles with a drizzle of cooking liquid.
TOP with radishes and scallions.
